Ingredients :
1 onion, chopped
Dash crushed red pepper
1 Tbsp. oil
1/4 cup light sour cream
1 can (19 fl oz / 540 ml) black beans, drained
1 can (19 fl oz / 540 ml) chili style stewed tomatoes
1 can (12 fl oz / 341 ml) whole kernel corn, drained
1/2 cup Tex Mex Shredded Cheese
Directions :
Brown onion and pepper in oil in saucepan on medium-high heat.
Add beans, tomatoes and corn. Reduce heat to low.
Simmer until heated through. Top with cheese and sour cream.
